Which type is best over a sink or hob?
A PVC roller or an aluminium venetian. Both wipe completely clean and neither absorbs steam. Avoid roman blinds and anything in curtain fabric within reach of a hob — they hold grease and are a fire consideration close to a flame.
How do I stop grease building up?
Choose a smooth, non-textured surface and wipe it monthly rather than annually. Grease bonds to textured fabric and becomes very hard to shift once it has been baked on by sunlight for a few months.
What about a window behind the sink?
Fit the blind outside the recess so the mechanism sits clear of splashes, and choose a chainless or motorised operation so you are not reaching over a wet sink to a dangling chain.

Faux wood yes, real timber no. Steam swells and bows genuine wood slats over time; faux wood looks nearly identical and is unaffected.
